Which Pre-Installed Programs Have You Deleted?

I noticed there are a number of programs that come pre-installed on the AT&T S3. Which programs have you deleted and/ or replaced? Why and with what? Thanks.

P.S.
Amazingly enough this is my first "smart-phone", so figured i'd check with more experienced users before I delete anything.

I generally don't remove carrier installed apps. Instead after rooting I freeze them with Titanium Backup. This means they will not load and use phone resources and will not show up in the programs menus. Then if I want to download an OTA carrier update I can unfreeze the factory programs and not have installation issues. I also install and use voodoo OTA rootkeeper which allows me to un-root for the OTA download/install and then re-root afterward. Again avoiding possible OTA factory download/install issues.
This isn't the only way to do these things, nor the only suitable programs. It is just what I have found works for me.

Thanks for the response. I went ahead and rooted my phone and installed Titanium Backup.
Was a little leery about rooting, but everything went fine. Thanks again.
