I don't know how to properly describe this: the "click" noise or tone that goes off when you click any icons or buttons... All I know is when volume is off (muted) that click noise is also muted, but at any volume level the click noise is always at full volume. Like that click tone is just either on or off (and very loud). I can't find anything in the settings related to it.

Is there a way to control the volume level of this? Thanks!

Go to settings -> Sound and it should be there under system sound. Don't have the phone in front of me so I can't check.

The only thing in there is under the Feedback category: "Audible selection" - Play sound when making screen selection. It's an on/off selection, there's nothing to control how loud it is that I can see.

Have you tried going into: Sound > Volume > System Volume? Adjust that and see if that helps.

It's called "audible selection," as posted above. Turn that off, and you're good.
