My understanding, was that a 2 amp car charger would charge my Nexus as fast as being plugged into a wall outlet, but that's not the case. It seems slow, and when I go in to the battery status while plugged in to the car, it says USB instead of AC power.

Any ideas why it isn't charging at full speed?

Are you using the stock cable? and what charger are you using?

You need to either modify the cable or the charger to tie together the two data pins. I did the cable, cut the data cables and soldered together just the two that are on the phone plug side, left the ones going to the usb disconnected, and now my gnex sees my Belkin 2.1 amp charger as AC and charges quite fast. It adds charge in the car even when I'm on 4G and GPS, which usb could not keep up with.
