For me, two things.
- Notification bar ghosting when using some 3rd party skins (not present in Froyo)
- Sound volume significantly lower
(I tellya, I'd go back to Froyo in a heartbeat if it were available to a non-root.There's just been NO benefit to Gingerbread for me at all).

some people are just gonna have problems, if you look hard enough.
hannsoft, have you tried doing a factory reset? I did one last weekend because of some general instability with the original GB OTA, and now sounds seem quite a bit louder. Granted, doing a factory reset is kind of a PITA because of all the reconfiguring you have to do to get your phone back to the way you like it, but it really seemed to help, and, as a bonus, my battery life, which I think was already good under GB, now seems even better.

Volume is still bad after reset for notifications. Voicemail ain't enter full code from icon just *86 doesn't recognize digits after pause are there unless it is in notification bar. Battery is no better and in some ways worse (could have been network
as it has been e lately).
Volume issue is on 2 bolts
