How come when you do a OTA update all your apps are saved

OTA usually just replaces the updated files. SD card is usually an RUU which is an entire wipe and rewrite.

I'm not an expert at rooting nor am I rooted. But I think the reason the ROM developers can't produce an "OTA-style" ROM update is because they don't have the "secret code" that only HTC/VZW have. So, they are forced to find a vulnerability of sorts to sneek in the back door. This requires a different method of installation that requires a total wipe. I'm sure others could explain it better, or correct me.
