Root now. The devs are way past that update already and will implement any good bits into their roms.

If you root now you can have the Gingerbread update now and Sense 3.0 but only root if you feel it's the right thing for you to do. Remember if you do decide to root make sure you read all the direction and only move forward if you understand them. Also there are many great members in the hacks section that could help answer any question you have.

If you do root you won't want to go back unless you need to send your phone back.

I held off for a long time. But last week I rooted and, VOILA! everythign works as it should.
no more reboots
GPS locks on instantly
everything is snappier and the UI is way better
I'm running the BAMF 2.1 ROM
be sure to load the MR2.5 radio too otherwise you'll have no radio.

Heck yes you should root!!
There are so many great roms out there especially
DASBamf which I'm using right now.
I held off for a while too but when I thought about all the cool things I could do with my rooted Moto Droid I just had to root again.
Here's a link to help you get started.
Thunderbolt Auto Root and Unroot
Now for it to work though you need to be on Windows.
