UOT question...

So I created a Froyo theme and I changed the data icons via Ninjamorph. Would I be able to email myself the new systemui.apk, unzip my UOT zip, swap apks, and then zip it back up and flash? If I can't do that, then what can I do?

Just copy the UOT zip to your sdcard. Then in recovery just select "install zip from sdcard". Select "choose zip from sdcard". Select the UOT zip and it will be installed.

This works, or just flashing the .zip from recovery works. Either or...
