1.) Is it possible to partition the SDcard from within the android environment?
2.) If so; can you create an ext2 partition other than sd-ext?
3.) Again, if so; can you create a partition that is mounted under /mnt/XXX (XXX=name of mount point) instead of / (e.g. /sd-ext/?
4.) And again, if so; how?

Please provide examples, and please remember that I do not have a computer to facilitate the process.

As far as i know of no. I am not a developer or really taht smart with computers or partitioning but from my understanding you can't partition an actively mounted system like SD cards are when they are in phones.

Again, I could be wrong i don't think so. I recommend checking with the XDA forums, they have more developers

I used my cwm recovery to partition mine. It automatically set it as an ext3. Just boot into recovery and select partition sd card, then follow the prompts. Don't worry about the swap size as we don't need it on our phones. As for renaming it, I don't think it is possible. Although I may be wrong, I've never tried.
