I am new to the Fire, and would like to know how private my browsing will be using Silk. This will be mostly for myself and the kids content consumption, but what will Amazon know about us and do with it?

If you mean because of their servers processing it and then sending it to your device, you can turn that off. I doubt they really care what you and your kids are looking at though.
