Which one offers more options for automating tasks? Should I use both?

More options? Tasker, by far. Tasker is nearly limitless in what you can do. From setting up always-on listening, ala Moto X, to combining actions with NFC tags. I'm a big fan of this one - Who's been fiddling with my phone? - Tasker Wiki
Way easier user interface? IFTTT, by far. Not nearly as much of a learning curve to IFTTT.

Tasked is mostly offline. IFTTT is cloud.
