I used to be able to press the down button on the back of the phone, which would bring up the option to turn the phone sound off for a specified amount of time, but now with the update it seems to be gone. I used this feature ALL the time (ie I'd turn it off for 15 minutes during an appointment and it would automatically turn the volume back on after 15 minutes). Any ideas where to find this quick feature .. or is it gone now?
Just having an "off and on" feature isn't helpful to me, as I know I'll forget that I've turned it off.

I'm guessing it is the same as Nexus devices running Marshmallow: https://support.google.com/nexus/answer/6111295?hl=en

It is still there it's just called "DND mode" now and the approximate settings are in "Sounds and notifications" and has other options to let certain apps and notifications/alarms using the "priority function"

    Cheers

Drag down the notification shade and tap "Do not disturb".

Yes, perhaps it requires more steps, but it is far more configurable and, well, that's just the way it is. Not much you can do about it other than live with it.
