I'm on a stable build of Nougat, but I'm not fond of the new UI, can live without the features, and Nougat has hit the battery. Is there anything I can do to go back to Marshmallow?

My advice is just deal with it for now. The battery will settle after a while. Just uninstall apps you don't need.

All of the factory images are available, just grab the last M image and install it.

If it's the UI you don't like install NovaLauncher, it's much better than the standard UI and you can tweek it to do what you want it to do.
