    I've read if rooted, android pay will no longer function. Is that true with Nougat?

    This is correct. Once you go back to stock, Android Pay will once again work.

    Just unlocking the phone will disable Android pay.

    SIM unlocking does not disable Android Pay, unlocking the bootloader does.

    Depending on the phone, there are kernels that block reporting of the unlocked bootloader so Android Pay will work. There are a few for my Pixel XL. Then there is Chainfire's suhide or RootSwitch also for the Pixel XL that can help block root.
