Why can't I see a lot of fonts on my Galaxy S7?

I recently did the software update for the 7.0 nougat for my Samsung Galaxy S7 phone. When I go into my contacts the font is yellow and the background is white. I can't read it. When I'm in settings it is the same thing, except it is on the very top and the background is white while the font color is almost white but not quite. I can't change it I guess but now it is very difficult to read anything and it strains my eyes. I can't even change the font color for anything because I tried looking for it and couldn't find anything to help.

I was having the same exact issue. I'm not sure if you already found the solution, but for anyone else I figured out it was my theme causing the yellow and white text over the white background. Try switching themes, as the one your using may be screwed up with this update.
