Yes, it's probably best to use folders on the desktop to organize Apps without having to use the drawer. There's a few good folder Apps on market. Try simi folder widget and see if you like it.

I like SimiFolder, looks pretty good. How about an app that hides unused icons in the app drawer?

I'm not sure you can do that without uninstalling the app from the phone. If you setup the phone right, you'll have no need to use the drawer.

You can hide apps in the drawer through Preferences, General Settings, Hidden Apps.

It lets you remove apps from the app drawer, but you can reverse it, they aren't deleted.

I use an app called Smart Taskbar by Kiumiu, awesome app and a great developer. There is a free and paid version, I paid for it just because the developer has worked so hard on it and always got back to me when I asked a question or requested a change. I use it with LauncherPro but it worked well with Sense before I went to LP.
