I have two great accessories that help. A SnS SlownSear which you can see in the back of the grill, and a Thermoworks "Smoke" with two probes and remote unit which allows me to monitor the meat and grill air temperature even from inside the house. Low, slow, and lazy.That’s a beautiful thing ...and I know you have the right technique down pat ...slow and steady wins the race ...
