Hi my phone automatically installed the android security updates, is it safe to uninstall?

The app permissions are super scary I don't like them one bit, is it safe to uninstall?

Which updates are you referring to? If its a Google app or device related update I would leave it alone, sometimes a lesser version can make certain features and functions unusable/unstable.
