How can I Disable cloud storage on my Android phone?

My phone automatically stores Excel documents to cloud which annoys me.
I want this to stop happening, please advise.

Which cloud? That might be a setting within Excel, or simply needing to be aware of where the document is saving when you select to save it. Did you sign in to your Microsoft OneDrive account when you first launched the app (or possibly any other Office app)?

Also, when I go to create a new workbook, I have an option as to where to create the workbook. Without signing in to a Microsoft account, the default is "This Device > Documents".

If you are talking about Google drive, Yes some devices automatically send the documents to Google Drive. Just try these steps,
01. Find the settings on the main menu
o2. Select "Accounts and Backups" ( Here um not sure sometimes it will appear as " Cloud and Accounts" /Accounts and Sync
03.Accounts/ Documents
04.Disable auto-saving
