When I want to paste I only get the option of the last text I copied. Is there a way to get a choice among recent texts that I copied?

You'd need to have a clipboard app that holds a history as the system clipboard is usually only one item (the last one copied). Google's Keyboard (GBoard) seems to have this capability but you need to enable it. That option holds copied text and items for an hour unless you choose to pin it to the clipboard.
