How to keep speakerphone on when hands-free calling someone

For example let's say I'm calling my Dad and I'm in the middle of washing dishes so I turn on speaker phone and when my dad answers speakerphone cuts off and I have to dry my hands to turn speakerphone back on

What happens if you start the call, and when he answers then you enable the speakerphone?

Without device info could be a billion things but more then likely Auto or assitant app.

Tell the Google Assistant to call your dad on speaker phone and it shouldn't cut off. Also I always turn on the speaker while the other person's phone is still ringing and I've never had it cut off on any of my phones when they answer. That could possibly be a phone app issue....clear the phone apps cache and force stop it, then try it again and see if the problem still happens.
