Using Esim and international travel

[Android Central Question]

Hi,
I tried to search for the answer, but didn't find it.

My family is traveling to Italy this summer. Both of my kids have iphones with esim. Normally, I'd buy a local sim, or set it up before leaving the US. Swap cards in the air, and I'm on a local network upon arrival. If I do that, does the phone know not to use the esim? I don't see a way in settings to switch sims, but maybe that is because it doesn't have that option yet. Am I overthinking this?
