Transferring from IOS

What kind of data are you referring to?

Contacts? Upload them to your Google account and they'll sync to your new phone

Mail? If it's Gmail it'll sync. Actually if it's pretty much ANY cloud-based email with your messages stored on the server, you'll see your messages once you sign in to the account. I THINK there's even a way to configure iCloud email but I'm not certain.

Texts? May not be so easy. Also you NEED to make sure you unregister your phone number from Messages or you'll never get your texts on your new phone

Game/app data will depend on the app developer.
 
There are some free syncing apps in the Playstore. I saw ones that will sync your iCloud contacts and calendar. There may be others. Start by searching for iCloud in the Playstore. If you back up your iPhone to iTunes, it physically put your pictures and music files on your PC/laptop. You can connect your phone to your PC and drag and drop to your new S5. Welcome to freedom!

If you backup'ed your iPhone into the cloud, you can use an app called Samsung Smart Switch. It will bring in your iCloud data.
