I have an AT&T HTC One M7. I recently moved back to India. I want to install the original HTC firmware, without the AT&T customization or it's bloatware. Can I do that? If I do so, would the phone work fine?
If I can do it, can anyone please tell me the procedure?

Did you buy the device from AT&T?

Yes. It is off the contract now.

If you didnt modify the ROM you have now, that is stock for the AT&T version of the M7. You could try rooting to get rid of that extra garbage, but you would no longer be able to accept any OTA updates.

Can't I flash the original HTC firmware instead of just removing the bloat from AT&T? I want my phone to get updates from HTC.

The ROM that is on the phone when you first opened the box is the original firmware. Normally, it is not a good idea to flash ROMs from other devices to yours as that might make your phone into a brick.

If you can find a ROM for the model number, it would probably work, but you won't find a stock JTC ROM for that model number. And you won't get OTA updates unless you buy the phone from HTC or one of its distribution chains. If you buy the phone from a carrier, the carrier is responsible for the updates. (Which AT&T can't do for you because you can't connect to one of their towers). However ... if you check the AT&T M7 forum on XDA, you'll see that from time to time, people post the latest update files, so you can update the phone yourself. (No guarantees - it should work, probably many people will post in the thread that it did work with their M7, but doing anything like that is at your own risk.)
