What class SD is the fastest that will work smoothly on the note 4?
What apps an methods will allow editing and saving of mp3 tags and office files?

Class 10 is the fastest class number, but SanDisk Ultra and Extreme cards are faster than that (and more expensive).

Any card will work with the Note 4 - it's not the phone, it's the data. You can read documents from a Class 1 card. 4k videos may not work smpppthly with a Class 10 card.

You can save and edit any file in a folder that the app that's saving or editing the file in owns. IOW, if in an Office-type app, you create a folder, that app can write to any file in that folder. If you're using an older SD card, that already has folders on it with files in them, you'll have to copy the files somewhere else, delete the folder, let the app create the folder, then have the app pick up the saved file and write it to the SD card folder.
