If I cut my micro SIM down to a nano SIM would I still be able to use it in a micro SIM phone (with adapter) or is a one way trip?

You can use it in an adapter. You have to be careful though, especially if you are planning on trimming one down rather than using a Sim cutting tool. It's hard to trim the micro to the exact size as a nano and as a result, you can have a hard time fitting into adapters.

Another thing to be cautious of is cheap Sim adapters. They can ruin your phone. Make sure you use a quality adapter from a reputable source. Android Central posted an article on this subject a while back with some good info in it, might want to check it out.

The safest way, of course, would be to see if your carrier would give you a free nanoSIM, then you don't have to worry about cutting. (Depending on the carrier and the sales associate you talk to, that's anywhere from a look like you're asking for assistance in committing a felony to "sure, hang on a minute".) You'd have to bring in the phone that uses the nanoSIM, of course, because they'll want to call it to make sure that the SIM isn't bad in any way.
