I was happy with my new LG G3 using Kitkat. Then after an "upgrade" to Android 5.0.1, I lose the ability to write Chinese (handwriting recognition), even though my language settings and keyboard settings stayed the same...force to use Chinese keyboard to type. In addition,it loose the Quite mode (capable of setting to accept calls from people that dial again) , capability to swipe from home button to QuickMemo+ and Voice mate, together with other problems. How can I get my old Kitkat 4.4 back ?

You'll need to use LG flash tool to flash older version of stock LG firmware. There's a detailed guide on xda. Make sure you follow instructions for you specific G3 variant.

Since I am new to this, can you please kindly show me how and where to get the flash tool and the stock LG firmware? Also, do I need to do this on a comouter, or can I just do it on the phone.

Sure, here's the link to the xda thread where you can get LG flash tool and the files you'll need to go back to KitKat:
