I switched providers and am selling my old phone. I restored it to factory settings, but how do I ensure my sims card has no personal information on it?

It's down to the new owner to put their sim in. I would never include it. Just discard it when you don't need it.

A sim card can only store a limited number of contacts, and only phone numbers and names.

You should be able to see if there are any.
There probably are none unless it came from an old phone, or you wanted to save important contacts to the sim card.

Open Contacts - Menu - Contacts to Display - Sim.
