If i put my tablet in a zip-lock bag will the steam of my shower still affect my tablet?

Moisture / steam can enter a zip lock bag.

Best solution is not having the tablet in the bathroom when you shower.

The damage does not happen immediately.... But with time you will almost certainly have some hardware failure.
