I lost my android tablet, and I'm worried that changing my google password will render Device Manager unable to find the device (or lock the device, or erase data on the device). I want to change my google password in case whoever has it has found a text file on the device that contains my google password (yeah, leaving that file there was stupid, I know).

No. If you changed your password on a pc and go to Google device manager there, your device would still be there.
If someone knocked on your door straight after, that knew you, and handed back your active device (not reset), the Google account would ask you to log back in. If it was factory reset, Google would let you start it up with your new password.
