Bluetooth is a means of connecting 2 devices, but there's nothing in the spec specifying what data gets transferred or what format it has to be in - so staying connected to one car but not another is par for the course. (I sometimes think it's the car manufacturer's way of forcing you to buy a new phone ... but their profit on that wouldn't be enough to waste time thinking about it.)
Some day we'll have a spec that will enable manufacturers to make Bluetooth work with all devices, but we don't have one yet. (13 years ago, you couldn't send MMS from one carrier to another - because they didn't all use the same spec. We're getting cellphones to work, but very slowly.)
