SIM is short for Subscriber Identity Module, it is what tells Verizon who the phone is registered to and what phone number should ring to the phone. Verizon has been using SIM cards to identify 4G devices since the HTC Thunderbolt, unless you have a really old device it's kind of a requirement in order to have service on a device.

Verizon gives you the SIM, so there's no reason to not have one in the phone, unless you're trying to get service without an account, which you can't. (The phone only has a SIM number, not a phone number. The phone number is associated with the SIM number in Verizon's database.
