I want to have 2 (or more) icons for of the very same App on my screen.
For example, I have a folder "google" and "communication" and in each one of them I'd like the gmail app to be displayed. In KitKat that was possible, it doesn't seem so for Lollipop.

Let's assume for a moment that I want to change the icon of my Opera Browser, which in theory one can change or assign any icon to any app.

Image 1) Shows that I've selected my Opera Browser Icon by tap/hold the icon until a blue/purple paint brush symbol appears.

Image 2) Shows that Once the blue paint brush symbol appears (but will disappear if you're not fast enough) that I tap on the icon once again to open additional icon swapping/changing settings.

Note Top right side of this image, there is a (+) symbol. This where you can add custom icons to any desired app or multiple apps.

I don't have this pink brush appearing when I tap/hold any icon.
    I use Android 5.1.1 on a Xiaomi Redmi 3. It's updated.

What else could I try ?

Welcome to Android Central! The problem is that your phone uses Xiaomi's MIUI launcher, which doesn't have an App Drawer (similar to iOS). Therefore, all apps that are installed show up on your homescreen somewhere, since your homescreen essentially acts as your app drawer. Because of this, you can't duplicate app icons if you're using MIUI. You could install a 3rd party launcher like Nova.
