When I talk and text it comes up totally different than what I am saying

Much of the problem is your accent and diction. Desktop systems for voice-to-text usually have a calibration system for learning your voice patterns. I doubt many phone apps will have that.

My mom's New England accent makes for some interesting voice-to-text messages on my company's voicemail system.
