If a nexus update ever fails (bootloops or whatever), how possible is it to recover and get it back to the way it was?

What is the possibility that you can recover it using ADB/recovery and get it back to normal, even if it involves factory resetting it?

Welcome to the forums. The chances of recovering a Nexus are very good. It's a simple matter of downloading the files, rebooting the device into the bootloader, and reflashing the files. Doing this does do a reset.
