Welcome to Android Central! Which HTC One model is it? There are probably over a dozen at this point.

Download the correct RUU for your device and boot to bootloader. Select fastboot and run the RUU.

Option b: Unlock your bootloader with Unlock_code.bin (from HTC website) then flash TWRP recovery via fastboot. Then download Resurrection Remix, wipe partitions (including system) with TWRP, and install Remix to update to 5.0 or 6.0. You will also need to flash a gapps (google apps) package, I suggest using Pico gapps. It is just the core gapps needed for playstore and sync functionality. If you flash Full or Stock gapps it removes most of the ROMs apps and replaces them with the google equivalent. Calculator, calendar, etc. Google will take over the ROM.

Remember if you are S-ON (info found at bootloader) you will have to install the ROM first with TWRP then extract the ROMs boot.img and flash it with fastboot. If S-OFF just install through TWRP.
