I have lots of AT&T apps etc - how to get rid of them permanently?

Root the phone (which breaks warranty) then uninstall. Make sure you know what you are uninstalling otherwise you can turn your device into a paperweight if you uninstall the wrong thing.

Chan has you pointed in the right direction for the permanent fix that is difficult to do.

The recommended workaround is to just "hide" the icons from your home screens.
