logged out - but it still displays new mails etc?

So. I bought an android device. I apparently had to use an account to enable the device with its features and be able to turn it on.
First thing i did when it turned on, was to log out again.
But it still "login" and displays mails from the account and display personal updates etc.
It must keep login details somewhere and send it across the network several times.
It even want me to actively login if i go to google accounts even though it says in the status pane i am logged in.

How do i run android and access to features without the accounts? Is the only way to reinstall it with my own OS? Or as this sight says "root it".?
