I went into Apps and was able to disable some apps easily. But many , when I select them, say "Turn Off" and when I say yes I'm offered a choice to "replace with factory version". I don't want ANY version of these. Any ideas?

So, do you want to disable updates or disable the app itself?

Disabling automatic updates for apps is done in the Play Store app - you would locate the app you want to choose when to update, tap it, tap the 3-dot menu in the top right and uncheck the box for auto-update.

Disabling the app itself - for a "bloatware" app (one forced on you by the manufacturer of the device or your carrier) you would do what you're doing, after the uninstall updates is done you then get the option to disable the app (typically, some are now not giving that option).
