Best way to manage Outlook contacts on Android?

Hi, I recently bought an Android phone, coming from Windows Phone. I'm used to the Microsoft ecosystem, so my contacts are saved in an Outlook.com account. Whats the best way to manage these contacts?

I tried syncing through the outlook app for Android. That seems to be one way traffic, if I add new contacts, they are not saved (even if I specify save in outlook.com account).

I also tried adding Outlook as an Exchange account. This works two-way, but it seems additional fields like address and birthday arent saved correctly. It also prevents me from disabeling the Gmail app, Thats not a big deal, but I'd rather disable everything I'm not using.

So anyone knows a way to make sure I can both download my outlook contacts ánd update/edit/add to them, and all fields including birthday etc?
