Google Assistant, should I or shouldn't I?

Tonight, Google Assistant asked me to let her learn to recognize my voice. I declined.

Basically, I've read about smartphones being used as remote voice recorders by government and even your carrier, and that gives me pause about using voice activation for Google Assistant.

Is the risk of being remotely eavesdropped worth it? Is the whole concern about remote surveillance overblown to begin with?
