I can copy my 8gb card onto a 64 gb card but it only shows 8gb. How can I take all of the information on the 8gb card to the 64 gb and see all of the available space..

Welcome to Android Central. If you view the 64 card with a file manager you will see somewhat less than 64gb free. If you copy all the data from the 8gb are you saying the 64 then only shows 8gb free? How are you copying the files? I would use a PC that had a card reader.

Make sure that you're seeing an 8GB card, not 8GB out pf 64GB used.

If the card shows a total of 8GB of space, install SD Insight and check the card. (An SD card is a whole computer - RAM, ROM and CPU, so some ripoff companies take old smaller cards and reprogram them to claim to be 64GB, and redo the printing on the outside.) SD Insight will tell you the date the card was made, which is usually 1 Jan, 1970 on these fake cards. (You can also use apps that write to the card, then read from it, to see if the entire card is there.)

If it turns out to be a real card, but you somehow created an 8GB partition, you can use an app like AParted to restore the card to one large 64GB partition, then copy the files to it with a file manager. (But it's usually the first situation - you have 8GB of files, but 56GB of free space.)

(If you have Android itself on the 8GB card, you can't just copy files - you'll have to install Android to the 64GB card. And if the 8GB card is installed as adoptable [internal] storage, you'll have to back up all your apps and data [Helium is good for that], change cards, installing the 64GB card as adoptable storage, then let Android do what it does.)
