I need to increase ram in the Galaxy S5 because 16GB gets filled quickly with the apps I use. Is there a way to swap out the 16GB for 32 or 64GB?

First you have RAM and storage confused. Phone has either 2 or 3GB of RAM, can't remember.

And unfortunately no you cannot replace either, they are soldered to the logic board and can't be swapped.

You can get an SD card to help with media storage, but few apps can be moved to sd card. If the storage isn't enough you will need to get a new phone that has more.
