    Samsung S5. I hold Volume Down + Power + Home, get to the warning about a custom OS, etc.

    The Volume down button successfully restarts the phone, but I'm stack in a loop at the Samsnung S5 logo. This occurred when a friend tried to unlock the phone for all carriers some months ago.

    The Volume up button DOESN'T HAVE ANY EFFECT. The screen doesn't change. I cannot enter Download mode to work with Odin.

    You'll probably have to reflash the ROM - see [Samsung] How to flash Stock ROM via ODIN.

    the volume down button is for download mode
    the volume up is for recovery mode

    Can't do that, as stated in step 4, I need to either press the Volume Up to continue or Volume Down to restart.

    Volume Up doens't have any effect. I only can restart.

    According to image 4 in the tutorial mentioned by Rukbet, nopes, volume up is to continue - and for some reason that doesn't work for me - and volume down is to reset.
