If you "uninstall" Android, you have a hand warmer, not a phone. The "old" version isn't there any more - the update didn't get "added" to it, the new version replaced the old version.
About the only way to get :back" to the old version is to flash the old version. (How depends on the make and model of the tablet - and if it's a cheapie Chinese tablet, there may be no way.) But you'd have to back
everythingup (see
Backing up an Android Device) before doing that because you'd have an "out-of-the-box" tablet - no downloaded apps, no music, no videos, no pictures, etc. You'd have to restore all of that from your backup.
