Why does my S8 ask to do a system update at 1 am AND have notification sound?

Every time my S8 has a new System update, it alerts me with the pop up box at 1 a.m. but the problem is it sounds an alert like my text message alert. It wakes up myself and my spouse in the dead of night!

I've tried to change the timing of the update, which so far only changes the second reminder, it does not affect future prompts.

I thought I found where I could do this when I went into the settings of the system update to turn off "priority" of installation, however when I turn it off it still does it so that's not the fix.

The update notification comes when it comes, regardless of any settings in the phone. That's up to the manufacturer or carrier, depending on where you get your updates. (If you're talking about app updates, you can set Play to only update on wifi, and turn wifi off when you go to sleep.)
