    You can select default settings with all your apps.
    Or more drastically you can factory reset which essentially wipes the phone clean and restores it to how it came out of the box.
    However....
    If this device was connected to anything online, it will be recognised as soon as you sign in and some of your apps will restore your original settings... So it may not be exactly as it came out of the box...

    Um, iPhone 6s or Galaxy S6?

    They need to remove their account from the phone (Google or Apple) so you can truly make it your own. After they withdraw their account you should factory reset and sign into your own account.

    A quick internet search should show you how to do this for Android or iOS.
