I have a Samsung Note 8 and a Samsung Gear Sport. Both are rated to IP68. However, I was wondering if sweat could damage them (from having my phone in my pocket/watch on my wrist) while working out or mowing the lawn. Does IP68 also cover reasonable amounts of sweat?

Yes(ish). IP rating is for 'normal' water, and since sweat can be salty or oily or have other stuff in it (won't go into the anatomy lesson here), it might be a bit corrosive. BUT, that is usually taken care of by the materials used on these devices, especially sports-oriented ones, like your watch. Also, unless you have a problem (severe problem), your sweat wouldn't be as corrosive as, say, constant ocean water sprays, so you'd be fine. If you wanna be on the safe side, just rinse off your devices after a workout (with tap water, not more sweat) and you're good to go. Plus, that will also help (the watch, especially) from developing a funky odor after a few sessions.
