Hello, I cannot remove the "apps" icon from my favorites tray. Its absolutely unnecessary since all you need to do is swipe up or down for your apps

Welcome to the forums. What phone do you have and what launcher are you using? Some stock launchers don't let you remove icons from the dock and you'd need to use a custom launcher, such as Nova.

I just got a Samsung Galaxy S10 and copied from my s7. The Apps Icon got transferred and it is greyscale and unable to move or remove it. As Javler mentioned, It isn't needed with my s10 as swiping up brings up the apps.

Use a 3rd party launcher like Nova , when you see that app uninstall then return back to stock launcher if you choose.
