trying to change the colour settings on my messages so the background is white and one text box is yellow and the other is blue I was able to do this on my old phone

Not sure which phone you have, but if the messaging app you're using stopped supporting that feature (like Samsung's app, for instance, where the newer version removed a bunch of customization options now only available via Themes) you won't be able to do it. You'd need a 3rd party app that supports that level of customization (like Textra or Pulse).
