I currently have a 3 year old moto G that crashes constantly while running newer updates of apps, particularly snapchat. I am thinking of buying a samsung galaxy s7 but my main concern is whether or not it will run new updates of apps seeing as it is a 2016 model. I don't know much about phones or technology so all help is appreciated. Thank you.

It depends on the app. An app can have a minimum and maximum Android version under which it can run be set. It may technically be able to run on, say, Nougat, but if it's set to run on Oreo or higher, it won't run on Nougat. (And if the "developer" sets it to run only on Oreo or Pie, it's going to be useless next year when Android 10 comes out.)

So the answer is "it depends on how well developed the app is".

The S7 won't get Pie, so an app that has Pie as the minimum won't run on the S7. But the Pixel 2 will get Android 11, and the 3 will get Android 12, so either will keep you going for a while.
